Mushroom Bacon Linguine Recipe: EVERYTHING Is Better With Bacon

My bacon obsession is been well established. I put it on pizzas and in soup, in spinach pie, you name it. I love this pasta dish because the flavors of the mushrooms are really enhanced by the bacon fat. Of course anything cooked in bacon fat is amazing, but this really brought out the woody smokiness of the mushrooms.
This dish can be done in less than 30 minutes and it’s absolutely delicious. 
Here you go bacon lovers, now just add a glass of wine and you're all set.

  • Linguine (or spaghetti)
  • 1 1/2 Streaky bacon, diced
  • 6-8  Large button mushrooms, thinly sliced
  • 1 1/2 tablespoon of chopped garlic
  • 1/2 large onion (chopped)
  • Italian herbs
  • 5 tablespoons of white wine
  • Salt
  • Olive oil
  1. Fry bacon pieces in oil until until fragrant
  2. In the same pan, add onion  and garlic, cook over moderate heat for 10 minutes.  
  3. Add Mushroom and stir-fry for approx 2 minutes
  4. Stir in  bacon, wine, Italian hearbs , salt and pepper.
  5. Cook linguine in boiling, salted water for 10 to 12 minutes until tender.  Drain. 
  6. Add Pasta into pan, lower heat and toss for approx 1 minute for flavors to blend into pasta
  7. Sprinkle with Parmesan cheese. 
Husband Says: "Husband says...mmmmm bacon! Everything IS better with bacon. Sorry vegans, you're missing out man. I could never, ever be a veggie head for the sole reason that bacon is God. I like a carrot as much as the next guy, but a carrot WRAPPED IN BACON is even better. This dish is super good. I love bacon in pasta and if you're a fan you can't go wrong with this one. If you're a vegetarian, well, I guess you're just screwed."
